Long Jing is one of the most famous Chinese teas which is also the reason why finding a truly good Long Jing tea is becoming increasingly difficult. Due to the high demand for this tea many farmers are choosing production quantity over the quality, especially in the touristy areas of Hangzhou. This Long Jing is grown in a mountainous conservation area away from the city life, same latitude but higher altitude than Hangzhou and, most importantly, no pollution. The result is a truly wonderful tea with the authentic buttery, nutty aroma that Long Jing is praised for. The flat pan fried leaves yield a crisp but soft, savoury but delicate liquor.
