Phoenix Fenghuang Baiye is a classic style Phoenix oolong from Guangdong. It is not as floral as the bouquet style Phoenix teas, but it shows more body and grounded woody character. It is a beautifully complex tea that takes practice to prepare perfectly. Being a rather temperature and brewing time sensitive tea it may take a few attempts to get it reveal it's beset character, which is fruity and sweet, layered and I'd say interesting to explore as it is ever changing through multiple infusions. This is 2018 picking. It is ready to enjoy but will do well with a few more years of further maturing.

Gong Fu brewing | This is not the most easy tea to prepare, but definitely worth the effort. If overbrewed or scalded with water that is too hot it can quickly turn bitter. Porcelain and clay teaware is best. I recommend starting slowly with 85C water and rather short infusions, then adjust as preferred. |
